DESCRIPTION With a 14% protein content (higher then most pastas), 100% Italian durum wheat semolina is combined with local spring-water. This cut is then bronze-extruded and slow-dried to produce this fashionable pasta. Since 1912 this historic pasta family has resided on the Sorrento coast at the foot of the Lattari mountains. Bucatini in particular is a cut favored by chefs. With a long strand and hollow core, the pasta cooks from both the outside and in at the same time to produce the perfect al dente texture.
